- Wash the gitzi and pat dry.
- Mix the Helvetic Barbeque Salt-n-Pepper Rub, garlic, thyme, rosemary and lemon slices in a bowl and add a little olive oil.
- Rub the whole Gitzi with the paste.
- Preheat the grill and place the charcoal on one side of the grill, switch on only one side of a gas grill or use a pellet smoker or smoker (indirect grilling).
- Grill the kid on the other side of the barbecue over indirect heat by placing it on the switched-off or charcoal-free side of the barbecue. Turn the kid every 20-30 minutes and brush with paste or olive to keep it juicy.
- Grill the Gitzi for approx. 3-4 hours or until the core temperature of the meat is 70-75°C.
- Leave the gitzi to rest on a chopping board before cutting into portions and serving.
You can use the usual side dishes such as Härdöpfel (potatoes), salad, vegetables, etc. Grilled vegetables are highly recommended. You can put peppers, zucchini, onions, carrots, etc. in a roasting pan, pour a 5dl beer over it and place it directly under the meat in the grill / smoker from step 5…
